Peanut Butter Brownies

I have officially made the best brownies ever.  Fudgey Brownies.

I thought I was done with brownies.

However, I saw this recipe and thought,  ”I haven’t found the best Peanut Butter Brownies ever…”   So of course I had to try them.   !!!

These are some yummy brownies.  Very peanut butter-y.  And fudgey like any good brownie should be.


So the moral of the story is: I will never be done with brownies.

Peanut Butter Brownies

  •  1/4 cup and 2 Tablespoons unsweetened cocoa powder
  • 1/4 teaspoon baking soda
  • 1/3 cup vegetable oil
  • 1/4 cup boiling water
  • 1 cup white sugar
  • 1 egg
  • 2/3 cup all purpose flour
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt

Filling

  • 4 Tablespoons unsalted butter, melted
  • 3/4 cup smooth peanut butter
  • 1/2 teaspoon vanilla extract
  • 1/2 cup confectioners’ sugar
  • 1/4 teaspoon salt

Preheat oven to 350º.  Prepare an 8×8 baking pan by lining it with parchment (to make for extra easy out) or spraying with cooking spray.

In a large bowl, stir together cocoa powder and baking soda.  Add half of the vegetable oil and all of the boiling water.  Mix until well blended and thickened.  Stir in the rest of the oil, sugar and the egg.  Finally, add the flour, vanilla and salt.  Mix until all of the flour is incorporated – do not overmix!!

For the filling, stir together the melted butter, peanut butter, and vanilla until thin and smooth.  Add the confectioners’ sugar and salt.  Mix until creamy and well combined.

To assemble, pour 1/3 of the brownie batter into the prepared pan.  Dot with half of the peanut butter filling.  Pour the rest of the brownie batter into the pan and spoon the remaining peanut butter filling over the brownie batter.  Use a butter knife to gently swirl the peanut butter into the batter, making sure it touches the bottom of the pan.

Bake for 35-40 minutes until a toothpick inserted in the center comes out clean.  Allow to cool before cutting into squares.
