Nutella Graham Cracker Chocolate Chip Bars

Our church hosted another picnic for our local policemen and firemen last week and luckily this didn’t happen again.

These bars were delivered safe and sound.  I hope they enjoyed them because I sure enjoyed eating the pieces that on purpose totally by accident got broken.

It is still summer and although it has cooled off some, it’s still nice to be able to whip something up without turning on the oven.

I recently purchase this lovely cookbook, Peanut Butter Comfort, by fellow San Diegan, Averie Sunshine.

It is PACKED with recipes I love because I love peanut butter.  Peanut Butter Hummus?  Yeah.  Sounds weird, tastes AHMAHZING just ask Lexi, even she thinks so.  And she’s 5.

These little squares were quick to whip up and provides you with your daily necessary dose of chocolate and peanut butter.

Boom.

I don’t know why boom.  Just.  Boom.  Try these.

 

Nutella Graham Cracker Chocolate Chip Bars

  •  1 cup (yes, 2 sticks!) butter, melted
  • 1-1/2 cups graham cracker crumbs
  • 2 cups confectioners (icing) sugar
  • 1/3 cup light brown sugar, packed
  • 1-1/2 teaspoon Vanilla extract
  • 2/3 cup creamy peanut butter
  • 1/2 cup Nutella
  • 2-1/2 cups semi-sweet chocolate chips, divided
  • more confectioners sugar for dusting

Spray and/or line with parchment paper or aluminum foil and spray a 9×9 inch pan.  Set aside.

In a large bowl melt the butter on High in the microwave.  It should take 60 to 90 seconds depending on your microwave.  Use the lower time and check it, you don’t want it to burn.

Remove and stir until completely melted.

Add graham cracker crumbs, confectioners and brown sugar, and vanilla.  Stir until combined.

Add peanut butter and Nutella and stir again.

Fold in 1 cup of chocolate chips.

Press mixture into the prepared 9×9 pan and press it down firmly.  Put pan in freezer.

Place the remaining 1-1/2 cups of chocolate chips in another microwave safe bowl to melt.  Put in microwave on high for about a minute then stir until completely melted.  You do not want to burn these!!

Pour the melted chocolate over the bars and return to the fridge until set, about an hour or so.

Slice and dust with more sugar and serve.

Bars will keep for about a week in an air tight container at room temperature or in fridge.  Will keep for about 3 months in the freezer.
